My fruit cake Recipe is the first of many very special series of recipes that I am sharing to help not only the cake designer but the novice at home.  

My most talked about recipe by clients! If you love fruit cake I know you are going to love this! I've spent years perfecting this recipe. Made slightly different from the normal way, this cake DOESN'T need to be made 6 weeks before the event or need 'feeding'!! I believe a fruit cake should be jam-packed full of flavour, be dense, moist and hold its own when cut and served. It really is delicious and truly magical!

This fruit cake recipe is extra special in so many ways. It's delicious & moist but the best thing is it only needs one week to rest and mature as opposed to 6-8 weeks to other recipes and it does not need 'feeding' with alcohol.

A Note From Hayley



My baking journey started way back when I was 12 making cakes with my Nan. I learnt the principles and science behind baking and over the years I’ve adapted and learnt and persevered. Having a good base knowledge and understanding of baking is key to success and I firmly believe this has helped me become successful.

All of my recipes have been made from my own experiences and my love of baking. Through trial and error and adapting to get them perfect.

I believe that decoration is secondary and the taste is no1. It's fundamental to any successful cake business and this part needs to be consistent, precise and above all else, you want clients, friends and family to be talking about how good it tastes long after the event.

I always say if there is love for what you do everything else happens naturally.
